• Cut the sweet potato in half, and put some oil in a pan and bake the one half until the potato is soft.
• Grade the carrot and cut the mushrooms into little pieces. Put some water in a frying pan and cook them with some turmeric until all the water has evaporated.
• Mix all the ingredients together and form the patties. I manage to make 3.
• Bake in tray lined with parchment paper.
• You have enjoy them in burgers or sandwiches.

• Place all the dry ingredients (oats, flax seeds, shredded coconut) into a bowl and mix.

• Then add the wet ingredients (mashed banana, vegan syrup of your choice) and mix until all the oats and seeds have been incorporated with the banana and the syrup. Basically you don’t want any dry spots. *It’s best if there are a few big pieces (most of the time shaped like a sphere) rather than small ones. That way your granola tastes better and doesn’t get burned into the oven. *

• Put the mixture into a baking tray lined with parchment paper and bake at 200oC for 10 minutes, or until your granola is golden.  Make sure you poke the big pieces with a toothpick before removing from the oven. You don’t want any super soft chucks.
• After the granola is nice and golden, let it cool for a few minutes. After it’s room temperature, mix in the chocolate and the dried fruit.

• First, cook your pasta according to the package instructions.
• In a pan, put a splash of water, and the onions. Cook over medium heat for 5 minutes, or until the onions are transparent.
• Then, add the red pepper and the mushrooms, and cook for another 5 minutes. Add more water if needed.
• Add the tomatoes, stir and then add the wine. Let it sit for another 5 minutes.
• Finally, add the vegan cream and you are basically done! The last thing is to add the pasta to the sauce and your dish is ready!

• Cut every vegetable into cubes of medium size. I prefer to grade the carrot, but you can cut it into cubes too if you want.
• Place a pan over medium heat and put in the onions and the carrot with some water and cook for 5 minutes or until the onion is transparent.
• Then add the peppers and cook for 5 minutes before you add the mushrooms.
• Now it’s time to prepare the noodles. Mine where super easy to cook, I just put them into boiling water (out of the heat ) and they were done in 5 minutes. But make sure to read the package of your noodles for cooking instruction.
• After the noodles are done, add to the rest of the vegetables the lettuce and some soy sauce. Stir a bit and immediately after that add the noodles.Now you can add the spices too.

• Check out thrift stores: You can be surprised about the things you can find in thrift stores. You may find the perfect desk and paint it in the color you like, a really cool vintage mirror, even a bookcase.
• Dig into your parent’s storeroom:  There you will find old tables or chairs, just like a thrift store, that your parents don’t need anymore. That way you can make the most out of stuff that your family has already spend money on, and you will only have to spend money on supplies for fixing or painting.
• Always shop on sale time:  Be patient and don’t rush to the shops. Wait for special discounts for students (most of the time they put them in September) or simply sales. You can save a lot of money, just be sure to go at the very start of the sale time or you won’t find everything you want.

• Use your bike or public transportation if you want to go somewhere. It’s a lot cheaper and eco-friendly.
• Don’t smoke or drink alcohol. (Seriously it's REALLY bad for you and you throw money into the garbage bin.)
• Use the campus gym and the free food service if your university offers one.
• Don’t be tempted to go shopping when you get your check at the start of the month.
• Rent your textbooks if your university doesn’t offer them for free (Mine does)
• If you want to go for a trip at summer brake book in advance and look for hostels and hotels that have special prices for students.

• Preheat the oven to 200oC. Chop the potatoes and the eggplant into 3cm round shapes/strips, put them in a baking tray with parchment paper, add a bit olive oil, salt and paper and cook until they are soft and  a bit brown.
• For the mince, cut the mushrooms and the onion into tiny pieces, grade the carrot and sauté them for 10 minutes. Then, add the soy mince, the water and the vegetable broth and cook until some of the water has evaporated. Add salt and paper to taste ( I also add some turmeric)
• For the béchamel heat the milk over medium heat. Then add the vegan butter, the vegan cheese and the vegetable broth. After the butter has melted add slowly the flour. Make sure you use a whisk to mix the flour into the milk. After you’ve added all the flour add salt and paper.  In my experience béchamel made with dairy free milk needs a lot of salt to taste good in a savory dish.
• Now you can assemble the moussakas.  Take a pyrex and first put the potato and eggplant slices. Then, add the mince and last the béchamel. You can now put at the very top some vegan cheese or breadcrumbs or just leave it like that. I personally added a cup of vegan cheese.  Bake it in the oven at 200oC until the top is golden.

WHAT YOU WILL NEED

• Pre heat the over to 200oC.
• Shift the cocoa powder and the flour into a bowl, then add the baking soda and the sugar and stir to combine.
• Then you can add all the wet ingredients and your final mixture is done!
• Line a baking pan with parchment paper and pour the mixture.
• Bake for 10 minutes, then pierce the brownies with a knife and take it out when the knife comes out clean.

ADDITIONAL TIPS

• Don’t get tempted and mix the seasoning and the fries on the parchment paper so you don’t have to clean an extra bowl. The parchment paper sucks up the extra oil or any type of sauce you want to put in and this makes your fries stick at the paper like you’ve put glue in them. (Done that, been there!)
• Sweet potato fries are the same, but sometimes you have to bake them more if you want them to be a little more crunchy.
